Fresh Salsa Verde (Salsa Verde Cruda)

This fresh Salsa Verde (salsa verde cruda) comes together in minutes and is made with 100% raw ingredients (no cooking required!). The flavor is bright and zesty and so good served over tacos, on a burrito bowl, alongside enchiladas, or with a big bowl of chips for snacking!

Makes: 1.5 cups

Ingredients

  • 1 tablespoon neutral oil
  • 3 large tomatillos, husk removed and rinsed, then cut into large wedges*
  • 1 serrano pepper, stem removed and cut in half
  • 1/4 small white onion, chopped
  • 2 garlic cloves, peeled
  • 1/2 small avocado
  • 1/4 cup fresh lime juice
  • 1/2 cup minced cilantro leaves and stems
  • salt and pepper to taste

Instructions

  • Make the salsa verde. Combine all the ingredients in a high-powered blender and blend until smooth. Season to taste with salt.

Storage Instructions

  • Any leftover salsa verde can be stored in an airtight container in the fridge for 5 days.

Notes

*Note: Tomatillos are NOT green tomatoes. They’re part of the gooseberry family, which is why they have a husk. They are a bit tart which makes for a very fresh salsa verde!
