This sparkling apple cider cocktail might be served chilled, but it’s brimming with the warming flavors of apple, cinnamon, and vanilla.
It’s a super simple fall cocktail that’s made with a homemade apple cider syrup, bourbon, a little lemon, and your choice of sparkling wine or apple cider. The apple cider syrup is as simple to make as throwing everything in a pot over a low flame, setting a timer, and sitting down to watch an episode of your favorite show on Netflix.
You’ll look like a pro-bartender at your next gathering with little to no effort on your part! Use this simple recipe to make a single cocktail, or scale it up to make a pitcher cocktail for a thirsty crowd.
Tools You’ll Need

Here’s What Goes Into the Cocktail
- Bourbon. Bourbon is hands-down my favorite alcohol to mix with fresh apple cider, but you can also swap in an American whiskey. This recipe would also be great with a darker rum.
- Apple Cider. ‘Tis the season for real apple cider, so try and get the good stuff! Look for freshly pressed apple cider in the refrigerated produce area of your grocery store. Skip anything that’s been sweetened or is already spiced since we’ll be doctoring it up with some brown sugar and cinnamon to make the syrup.
- Sparkling wine. I like making this cocktail with a dry sparkling wine for extra fizz. If you want to cut down on the alcohol, try swapping in some non-alcoholic sparkling apple cider.
- Lemon juice. Your bourbon cider cocktail will not taste like lemon, I promise! It simply brightens up the flavor and makes the apple flavor more pronounced.
- Vanilla bean. A real vanilla bean totally makes the apple cider syrup, but you can swap in vanilla extract if necessary.
- Cinnamon sticks. Use cinnamon sticks to flavor the syrup and for a fun cocktail garnish.
How to Make a Bourbon Apple Cider Fizz Cocktail
- Make the apple cider syrup. The apple cider is flavored with cinnamon and vanilla, then simmered for 20 to 30 minutes until reduced. I always stir in the brown sugar off the heat and wait until it’s dissolved and the mixture is cool before using.
- Add the ingredients to a cocktail shaker and shake it up. You’ll need to strain the cocktail over ice and then top it off with the sparkling wine. If you try shaking up the wine in the cocktail shaker, you’ll end up with a big mess!

Having a Party? Make This a Pitcher Cocktail!
I love making this bourbon apple cider fizz for a crowd and it’s so easy to make a pitcher. Just follow the instructions below to prepare 8 to 10 servings.
In a large pitcher combine:
- 2 cups bourbon
- 2 cups apple cider syrup (recipe below)
- 1/2 cup fresh lemon juice
- 2-3 cinnamon sticks
- 1 cup fresh cranberries
Jenny’s Tip: Never add ice to the pitcher as this dilutes the drink. Stir well to combine and when it’s time to serve, pour into cocktail glasses filled with ice and top with sparkling wine or apple cider.

Ingredients
Bourbon Apple Cider Fizz
- 2 oz bourbon
- 2 oz apple cider syrup (recipe below)
- 1/2 oz freshly squeezed lemon juice
- 4 oz sparkling wine*
- fresh cranberries , for garnish
- ice
Apple Cider Syrup
- 3 cups good quality apple cider
- 3/4 cup brown sugar
- 2 cinnamon sticks
- 1 vanilla bean , split in half
Instructions
- To make the apple cider syrup: Combine apple cider, cinnamon sticks and vanilla in a medium saucepan over medium-low heat. Simmer until reduced to 3/4 cup (about 20-30 minutes) and remove from heat.
- Stir in brown sugar and allow to cool to room temperature.
- Discard cinnamon sticks and vanilla bean and store in an airtight container at room temperature for 1 week or in the fridge for 1 month.
- To make the cocktail: Combine bourbon, apple cider syrup, lemon juice and a bit of ice in a cocktail shaker. Shake for 10 seconds and strain into a glass with ice. Top with sparkling wine or sparkling apple cider and garnish with cranberries.

This recipe looks great but I have one question about it. I’m reading that 3 cups of cider reduces to 3/4 cup in 20-30 minutes of simmering. That can’t possibly be right, so is it 20-30 min of simmering OR simmer until reduced to 3/4 cup? Thanks!
Simmer until it’s reduced to 3/4 cup. The timing will depend on what kind of vessel you use to reduce the cider–a wider pot will reduce more quickly.
I enjoyed the flavors but upped the whisky by another 1 oz. And added 2 dashes of angostura bitters to each glass to counteract the sweetness.
